Rainbow Veggie Quesadillas

Leftover Tip: Reheat in a toaster or air fryer to crisp up again!

Ingredients:

  • 4 whole wheat tortillas

  • 1 cup shredded cheese (cheddar or mozzarella)

  • 1 red bell pepper, sliced

  • 1 yellow corn (or ½ cup frozen)

  • 1 small zucchini, grated

  • 1 carrot, grated

  • ½ tsp cumin or taco seasoning

Steps:

  1. Lightly sauté veggies in a pan for 3–4 minutes with a bit of oil and seasoning.

  2. Lay a tortilla flat, sprinkle cheese, then layer veggies, then more cheese.

  3. Fold and grill each side until golden and crispy.

  4. Cut into wedges and serve with salsa or yogurt dip.
