Leftover Chicken Wraps with Yogurt Sauce
Rainbow Veggie Quesadillas
Serves: 4
Time: 15–20 min
Leftover Tip: Reheat in a toaster or air fryer to crisp up again!
Ingredients:
4 whole wheat tortillas
1 cup shredded cheese (cheddar or mozzarella)
1 red bell pepper, sliced
1 yellow corn (or ½ cup frozen)
1 small zucchini, grated
1 carrot, grated
½ tsp cumin or taco seasoning
Steps:
Lightly sauté veggies in a pan for 3–4 minutes with a bit of oil and seasoning.
Lay a tortilla flat, sprinkle cheese, then layer veggies, then more cheese.
Fold and grill each side until golden and crispy.
Cut into wedges and serve with salsa or yogurt dip.
